2 cups bran flakes cereal, coarsely crushed
1 1/4 cups, fine, dry bread crumbs
1 cup toasted chopped pecans
1 tsp salt
1/2 tsp pepper
3/4 cup milk
2 large eggs
6 (8oz) catfish fillets
3/4 cup all-purpose flour
1. Heat oven to 350 degrees F. Lightly grease shallow baking pan large enough to hold fish in a single layer.
2. In shallow bowl, combine bran flakes, crumbs, pecans, salt, and pepper. Mix well. In separate shallow bowl, whisk together milk and eggs until well blended. Coat fish with flour, shaking off excess. Dip into milk mixture, then into breading mixture, coating evenly and pressing breading into fish. Place skin side down on the baking pan.
3. Bake 10 to 15 minutes or until fish flakes when tested with fork.
Should serve 6…but it is darn good. The two of us all finish it off.
TIP: To Toast the pecans, heat oven to 350 degree. Place pecans in shallow baking pan. Bake 6 to 8 minutes or until light golden brown.
