Poor mans chowder

I saw this in a magazine:

1/2 pound (or so) of your favorite fish fillets - the article specifically called for bluegill
2 cans of Cream of Potato Soup
1 small to medium onion (depends on how much you like onion)
bacon
season to taste

cook bacon, drain, and put off to the side
put some olive oil in a pot; add fillets. Cook until almost done.
add soup, onions, bacon, and seasonings. Simmer (low heat) for an hour or so or until fish finishes cooking.

the article indicated the longer it sits after it’s cooked the better. It also says to experiment by adding things you like. For instance - I like to cook up a couple diced potatoes and add them to the soup - I like a chunky chowder.

I’ve seen this recipe before. Sounds like a good way to fix the 5lbs of northern fillets I have in the basement.

U know that does sound good, Id even say add a touch of cajun seasoning and some smoke sausage in the mix, not alot just enough to make you say hmmmm.

ooh that sounds good.  I’d add diced red potatoes and corn along with that.  Have a side of sour dough bread with a TALL glass of Bell’s lager.
